Ingredients

  • PAM® Original No-Stick Cooking Spray

  • 1 can (15 oz each) OR 1 carton (14.8 oz) Hunt's® Tomato Sauce

  • 2 teaspoons caldo con sabor de pollo (chicken bouillon)

  • 1-1/2 pounds boneless skinless chicken thighs

  • 1 pound small red-skinned potatoes, quartered

  • 2 cups baby carrots

  • 1 cup chopped green bell pepper

  • 1 cup chopped yellow onion

  • 2 tablespoons chopped garlic

  • 1/4 teaspoon ground black pepper

Directions

  • Step one

    Spray inside of 4-quart slow cooker with cooking spray. Stir together tomato sauce and bouillon in slow cooker. Add remaining ingredients, except black pepper; stir to combine.

  • Step two

    Cover; cook on LOW 8 hours or on HIGH 4 hours or until chicken and vegetables are tender. Sprinkle with black pepper; stir before serving.

Tips

For extra flavor, stir in 1/4 cup sliced green olives with the black pepper.
