Ingredients

  • PAM® Olive Oil No-Stick Cooking Spray

  • 1 bag (12 oz each) Birds Eye® Fire Roasted Peppers and Onions

  • 1 pkg (16 oz each) dry ziti pasta, uncooked

  • 1 tablespoon extra virgin olive oil

  • 1 small onion, finely chopped

  • 3 cloves garlic, finely chopped

  • 1 teaspoon dried oregano

  • 1/4 teaspoon crushed red pepper flakes

  • 1/2 teaspoon dried basil

  • 2 cans (15 oz each) Hunt's® Fire Roasted Tomato Sauce

  • 1 can (14.5 oz each) Hunt's® Fire Roasted Diced Tomatoes, drained

  • 1 container (15 oz each) ricotta cheese

  • 1/2 cup shredded Parmesan cheese

  • 1 egg

  • 2 cups shredded mozzarella cheese

  • chopped fresh basil or parsley, optional

Directions

  • Step one

    Preheat oven to 425°F. Spray 9x13-inch casserole dish with cooking spray. Pour fire roasted peppers and onions into dish and bake 10 minutes. Remove from oven and set aside to cool.

  • Step two

    While vegetables cook, cook pasta in large pot of salted water according to package directions; drain and return pasta to pot.

  • Step three

    SAUCE: Heat olive oil in a large saucepan over medium-low heat. Add onion to pan and cook until very soft and just starting to brown, about 10 minutes. Stir in garlic, oregano, basil, and red pepper flakes and cook until garlic is tender, about 2 minutes.

  • Step four

    Pour in tomato sauce and fire roasted tomatoes. Bring sauce to a simmer and let it bubble on the stove for about 10 minutes.

  • Step five

    Stir ricotta, Parmesan, and egg together in small bowl. Chop fire roasted peppers and onions into small pieces.

  • Step six

    Pour sauce over cooked pasta and stir to coat. Pour pasta into baking dish. Top with chopped peppers and onions. Dollop ricotta mixture over vegetables and spread gently in an even layer. Top with shredded mozzarella.

  • Step seven

    Bake 15 to 20 minutes, until cheese is melted and lightly browned on top. Garnish with fresh basil or parsley, if desired, and serve!
