Ingredients

  • 2 teaspoons olive oil, divided

  • 1 pound Linguica sausage, cut into 1/2-inch cubes

  • 3 cloves garlic, finely chopped

  • 1 large onion, diced

  • 1 small red bell pepper, seeded and diced

  • 2 teaspoons salt

  • 1 teaspoon crushed red pepper flakes

  • 1/2 teaspoon ground black pepper

  • 1 can (28 oz each) Hunt's® Fire Roasted Diced Tomatoes, drained

  • 6 eggs

  • 2 tablespoons chopped fresh basil

  • 1 tablespoon finely chopped fresh oregano

  • 1/2 cup crumbled feta cheese

  • Sliced crusty bread, lightly toasted, optional

Directions

  • Step one

    Preheat oven to 375°. In a 12-inch oven-safe skillet, heat 1 teaspoon olive oil over medium heat until hot. Add sausage; stir and cook 7 to 8 minutes or until sausage is sizzling and begins to brown. Add remaining oil, garlic, onion, bell pepper, salt, red pepper flakes and ground pepper; stir and cook additional 5 minutes or until bell peppers are soft and onion is translucent. Add drained tomatoes; stir and simmer 5 minutes.

  • Step two

    Once tomato mixture is bubbling and slightly thickened, remove skillet from heat. Make 6 deep wells in tomato mixture with large spoon. Crack eggs into each well. Place skillet in oven, uncovered, and bake 8 to 10 minutes or until egg whites are set. Remove skillet from oven and top with basil, oregano and feta cheese. Allow baked eggs and sausage to cool slightly. Serve with sliced, crusty bread if desired.

Tips

Linguica is a dry Portuguese sausage bursting with delicious paprika and garlic flavor. It is similar to chorizo, but not as hot. It can be found at most specialty meat markets, but if you cannot find it in your area, a good substitute is sweet Italian sausage.
